Get ready to ruuummmbbbllee--

OK not really but this weekend should be interesting! Rosie is going out of town so I'll be worrying about her but I know she'll have fun and I trust the people she is with...then Noah will be working to finish his applications--they are looking good--I need to finish transcripts today! I have Holland Hall Sat am--then a wedding to shoot--then a party--Sun I will probably rest and recover!
Have frozen sauce that I'm using for dinner tonight--love the freezer stuff!!

Crazy week almost over--

Well tonight we had a freezer meal again..basil balsamic pork chops with the roasted garlic mashed potatoes(which reheat really well!) and zukes--
This week has been busy!! I am glad it is nearing an end--I am really going to slow it down next week and get Noah's transcripts and application for camp and OSSM done by next Friday--that is earlier than the deadline but I don't want to wait until the last minute and I just have to get it done!!! It is so hard for me--breaks my heart!But it will be the best chance for him to be challenged and it is such a good school!

what's working for freezer cooking!

So the meatloaves were good--meatballs--spanish rice and red sauce. I will hold my thoughts on the mashed potatoes until they are done--they looked a little watery when I put them in : ( But maybe they will cook up well! The red sauce was really good and actually quite easy--and very versital! It has saved money and time--so I need to try out a few more--I am doing some red sauce and lasagna on Mon--

Nadia Poster

We went past the thrift store today and I found a Nadia Comeneche(sp?) poster--the glass is cracked but the poster is actually a limited edition poster by Leroy Neiman-a silkscreen print--I paid $15--it is worth $100-150 and will go up in pric--SCORE! I need to get the glass replaced--but I'm thinking since we are going the Nadia meet in a few weeks I might try to get her to sign it--wouldn't that be cool!!

Silver Dollar City Skillet

When we went to SDC this Dec. we had a sausage skillet that was SO good--of course they have these monster skillets so I needed to figure out how to make one in my cast iron pan==so I did it in stages--
First some red and yellow pepper and polska kilbasa--then next phase was potatoes and onions--left some of the grease from the sausage to fry them in--then I heated up some frozen corn and heated it in a dutch oven --then added all of the cooked bits and left it to heat up==I seasoned with some sea salt, garlic, pepper, and Mrs Dash garlic and herb==it is pretty darn close to Silver Dollar City's!
I also made some amazing crossiants from stratch too--
The skillet will be a favorite around here I think--good stuff!

Goal Setting Sun

OK so I STILL haven't gotten to the garage--I set aside some time Wed--tonight my goal is to get the baby pics done and CD burned--such a sweet little thing! I have a class tomorrow night I have to get ready for(hello my name is queen of procrastination) I can do that tomorrow--
I need to get also make a bazillion cups of red sauce for freezing--I got a book called Fix, Freeze Feast that is AWESOME! No tons of cream of whatever recipes--pretty healthy stuff--I will use the sauce in Spanish rice--one of which we will have Mon night and several that will be frozen--we made and froze breakfast burritos for Noah this AM--the rest of the sauce will be frozen and used for future pasta meals--the whole freezing thing is making me happy I am glad to find some healthier recipes and I need food for crazier days--we don't eat out and I don't run to the store for something and then spend way more money than I need to!
Need to get stuff together for the Cornerstone meeting too--I think it will be fun--
OK now I'm going to write an email and finish pictures!!

Thankful for planning!

Well today ended up being a little more crazy than I thought--we found out last night about a meet tomorrow--so Noah went to G&G's and I had luckily gotten out a meatloaf which I didn't make last night so dinner was easy! We have to do meet hair tonight--what a pain that is! SUPER tight pony tail--slicked back with 10 tons of gel--then mousse on the pony tail and tiny sections are twisted and curled over night-then hairspray--so we'll do this tonight and take out the curlers tomorrow AM--than masses of hairspray again--it doesn't move!! I'm not very good at the curls--maybe by the time she is done I'll be able to do it!!
